This side salad celebrates the best of citrus season

This mixed citrus and avocado salad is everything you want during the peak of citrus season. Vibrant colors, sweet and tart flavors, AND it's healthy!

How does this salad come together?

Peel and slice up whatever citrus your heart desires. Do the same with an avocado. Arrange those beauties on a big plate or a platter.

Next, you'll whisk up a few ingredients and drizzle them over the produce.

Aaaand, that's really about it. Couldn't be easier.

Customize this salad however you'd like!

I used blood, cara cara, and mandarin oranges for this version. But, really, you should use whatever citrus varieties that you like? 

Want to use a grapefruit? Do it. Navel oranges? Yup, go for it. Heck, you could even slice up some Meyer lemons and toss them into the salad.

Ingredients
  

  • 1 blood orange peeled and sliced
  • 2 cara cara oranges peeled and sliced
  • 1 mandarin orange peeled and sliced
  • 1 avocado sliced
  • kosher salt and pepper to taste

For the dressing

  • 2 tablespoon olive oil
  • 1 lemon juiced
  • 2 teaspoon honey
  • 1 teaspoon poppy seeds
  • kosher salt and pepper to taste

Instructions
 

  • Arrange the citrus and avocado on a plate.
  • Season with kosher salt and pepper.

To make the dressing

  • Combine all of the ingredients for the dressing in a small bowl.
  • Whisk until combined.
  • Pour over the prepared citrus and avocado.
