This Watermelon Mimosa is light, sweet, and bubbly. It's easy to make and looks beautiful. Enjoy it for brunch, Mother's Day, etc.

Nothing quite beats a mimosa, right? It's a classic for a reason, after all. This version is a fun and easy riff on the original. Even if you're a purist, I'm pretty sure that you'll enjoy this rendition.

💭 What is a Watermelon Mimosa?

We all know what a mimosa is, right? It's a cocktail made up of orange juice and champagne (or other bubbly). The proportions of OJ to bubbles can vary according to your preferences.

A Watermelon Mimosa subs the orange juice for (you guessed it) fresh, delicious watermelon juice.

📝 Ingredients

This mimosa only requires TWO ingredients! They're pictured and described below. See the recipe card for full information on ingredients and quantities.

  • Watermelon (juice): Fresh watermelon gets pureed and strained to make sweet, fresh watermelon juice. You can use store bought if you have to, but it won't be the same.
  • Bubbly: You can use whatever kind of bubbles you prefer: cava, prosecco, champagne... I usually go with prosecco.

👩🏻‍🍳 How to make a Watermelon Mimosa

Step 1. You'll start out by pouring some of your watermelon juice into the bottom of a champagne flute.

Step 2. After that, top the juice off with the bubbles of your choosing!

Step 3. Garnish with some fresh mint.

What to serve with a Watermelon Mimosa

Any breakfast or brunch food will do! Maybe these Cheesy Hawaiian Roll Breakfast Sliders? These Overnight Malted Waffles would be lovely as well.

Do I have to use fresh watermelon juice?

I'd highly recommend using fresh juice. Store bought watermelon juice can be used in a pinch, but the fresh juice really gives the best flavor.

What kind of bubbly should I use?

Whatever you prefer! I usually reach for prosecco, but you can use any sparkling wine, champagne, etc.

When should I serve this drink?

I think that this is a really lovely brunch drink, but you can serve it any time that you'd like! It would be a beautiful addition to a bridal shower, Mother's Day, or any summer gathering.

  • Cocktail jigger
  • champagne flute

Ingredients
  

  • 3 ounces fresh watermelon juice see notes
  • 3 ounces champagne/prosecco/sparkling wine see notes

Instructions
 

  • Pour fresh watermelon juice into a champagne flute.
  • Top with bubbly.

Notes

  • To make fresh watermelon juice, add cubed fresh watermelon to a blender or food processor. Blend/process until smooth. Strain the pureed watermelon through a fine mesh strainer. Store the watermelon juice in the fridge (should keep for a few days). As the juice sits, it will separate a bit. Just give everything a stir when you're ready to use it.
  • Use whatever kind of bubbly you like: champagne, cava, prosecco, sparkling wine...
  • You can adjust the proportions of watermelon juice to bubbly according to your preferences? Like a bit more juice? Add it. Want more bubbles? Add them!
