Coconut Mojito

- 2 teaspoons simple syrup
- 5-8 fresh mint leaves
- juice from ½ lime
- 1.5 ounces coconut rum
- Coconut La Croix sparkling water see notes
- a sprig of fresh mint leaves for garnish
Add the simple syrup, mint leaves, and lime juice to the bottom of a tall glass. Gently muddle the mint.
Add the rum, followed by ice.
Top with Coconut La Croix. Garnish with a sprig of mint.
- You can use an unflavored sparkling water (lime would be nice, too), but the coconut sparkling water really adds something
