Coconut Mojito

A Coconut Mojito is lightly sweet and very refreshing. The coconut flavor is a fun and delicious twist on a classic cocktail.

Ingredients

  • 2 teaspoons simple syrup
  • 5-8 fresh mint leaves
  • juice from ½ lime
  • 1.5 ounces coconut rum
  • Coconut La Croix sparkling water see notes
  • a sprig of fresh mint leaves for garnish

Instructions

  • Add the simple syrup, mint leaves, and lime juice to the bottom of a tall glass. Gently muddle the mint.
  • Add the rum, followed by ice.
  • Top with Coconut La Croix. Garnish with a sprig of mint.

Notes

  • You can use an unflavored sparkling water (lime would be nice, too), but the coconut sparkling water really adds something
