Thai Basil Pork and Noodles

Ingredients

  • 1 tbs toasted sesame oil
  • 1 onion diced
  • 4 cloves garlic thinly sliced
  • 2 teaspoon sriracha or more to taste
  • ½ teaspoon red pepper flakes or more to taste
  • 1 lb ground pork
  • 2 teaspoon brown sugar
  • 1 tbs fish sauce
  • 2 tbs soy sauce or tamari
  • ¾ cup Thai basil plus more for garnish
  • 16 oz rice noodles

Instructions

  • Start heating a large pot of water over medium-high heat until boiling (for the rice noodles).
  • Heat the sesame oil in a heavy bottomed skillet over medium heat.
  • Add the onions, garlic, sriracha, and red pepper flakes. Sauté for 2-3 minutes.
  • Add the ground pork and cook until cooked through, crumbling it as you go.
  • Combine the brown sugar, fish sauce, and soy sauce in a small bowl. Add the mixture to the skillet. Continue cooking for 1-2 minutes, allowing the sauce to thicken a bit.
  • Add the fresh Thai basil. Turn off the heat once the basil has wilted.
  • Cook the rice noodles according to directions on the package. Add cooked, drained noodles to the skillet and toss until the noodles are coated in the sauce.
  • Garnish with additional Thai basil and serve immediately.
