Peach Syrup

- 1 cup water
- 1 cup granulated sugar
- 1 peach pit removed and chopped
Combine the water and sugar in a heavy bottomed saucepan over medium high heat.
Whisk occasionally until the sugar dissolves completely and the syrup comes to a simmer.
Add the chopped peach to the syrup and give it a good mix to ensure that the peach pieces are submerged in the syrup.
Turn the heat off and allow the syrup to cool completely.
Strain the peach pieces out of the syrup and store it in the refrigerator in an airtight container.
- You can extend the shelf life of this syrup a bit by adding about half an ounce of plain vodka to the syrup
