Frosted Sugar Cookie Bars

Ingredients

For the bars

  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • 8 tbs unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract

For the frosting

  • 8 tbs unsalted butter, room temperature
  • 3-4 cups powdered sugar
  • 3-4 tbs milk
  • 2 teaspoon vanilla extract
  • food coloring, optional
  • sprinkles, optional

Instructions

To make the bars

  • Preheat the oven to 375 degrees F. Line a 9x13-inch pan with parchment paper, leaving some overhang on the sides. 
  • In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In the bowl of a stand mixer, cream the butter and sugar together until light and fluffy. Add the egg and vanilla extract, beating until combined.
  • Little by little, add the dry ingredients, scraping down the sides as necessary.
  • Press the sugar cookie dough into the bottom of the prepared pan, in an even layer. Bake 18-21 minutes, or until the edges just begin to turn a golden brown color. Allow the bars to cool completely.

To make the frosting

  • Beat the remaining 8 tbs of butter in the bowl of a stand mixer for 2 minutes. Add 2 cups of powdered sugar, 1-2 tbs of milk, and the vanilla extract.  Beat until combined. Add as much powdered sugar as needed to reach your desired frosting consistency. Use the remaining milk to thin the frosting out if needed.
  • If using, add the food coloring. Beat for 5 minutes, or until the food color is adequately distributed (scrape down the sides if necessary) and the frosting is light and fluffy.
  • Frost the fully cooled bars and top with sprinkles. Use the parchment paper to remove the bars from the pan and slice into squares.
