Apple Oat Streusel Muffins

For the muffins
- 1 ½ cups all-purpose flour
- ¼ teaspoon kosher salt
- 2 teaspoon ground cinnamon
- 1 teaspoon baking powder
- ¼ cup coconut oil, melted and cooled slightly
- ⅔ cup brown sugar, packed
- 2 eggs
- ¾ cup cooked plain oatmeal
- ½ cup unsweetened applesauce
- 1 cup finely chopped apple (see notes)
For the streusel -
- 2 tbs all-purpose flour
- 2 tbs old fashioned oats
- 2 tbs brown sugar
- ¼ cup walnuts, chopped
- ¼ teaspoon ground cinnamon
- 2 tbs unsalted butter, cold and cut into small pieces
To make the muffins
Preheat the oven to 350 degrees F. Line a muffin tin with paper liners and set aside.
In a medium-sized bowl, whisk together the flour, salt, cinnamon, and baking powder. Set aside.
In another medium-sized bowl, whisk together the coconut oil, brown sugar, eggs, oatmeal, and applesauce.
Add the dry ingredients to the wet and stir until just combined. Add the apple and stir until combined.
Divide the batter between the 12 muffin cups.
To make the streusel
In a small bowl, combine the flour, oats, brown sugar, walnuts, and cinnamon. Work the butter into the dry ingredients until it resembles wet sand.
Sprinkle the streusel evenly over the 12 muffin cups.
Bake for 13-15 minutes, or until a toothpick, when inserted into the center, comes out clean. Allow the muffins to cool in the tin for 5 minutes before removing them to a wire rack to finish cooling.
Notes: I used a Gala apple and left the skin on
