  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 2 eggs, room temperature
  • 2 tsps vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 tsp salt
  • 1/2 tsp baking powder
  • 3 cups old-fashioned rolled oats
  • 1 1/2 cups semi-sweet chocolate chips
  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Set aside.
  2. In a medium-sized bowl, whisk the flour, salt, and baking powder together. Set aside.
  3. In the bowl of a stand mixer, cream the butter and sugars together until light and fluffy. One at a time, beat in the eggs, followed by the vanilla extract.
  4. Add the dry ingredients to the butter/sugar mixture and beat until just combined.
  5. Add in the oatmeal in batches, stirring after each addition, until just combined. Stir in the chocolate chips until evenly distributed.
  6. Drop the dough by the 1.5 tablespoons onto the prepared baking sheets. Bake for 10-12 minutes, or until the bottom is golden brown.
  7. Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack to finish cooling completely.
