Add the water and sugar to a heavy-bottomed saucepan over medium heat. Whisk to combine.
Whisking occasionally, bring the mixture to a boil. The sugar should be completely dissolved into the water at this point.
Turn off the heat and add the vanilla extract. Whisk to combine.
Allow the simple syrup to cool completely before storing in the refrigerator in an airtight container.
- You can add about half an ounce of plain vodka to the syrup in order to extend its shelf life a bit
