Cilantro Lime Rice
This Cilantro Lime Rice tastes just like the rice you get at Chipotle.

- 2 ¼ cups basmati rice
- 3 cups water
- 2 bay leaves
- 1 tbs vegetable oil
- juice of 2 limes
- ½ cup fresh cilantro chopped
- kosher salt to taste
Combine the rice, water, and bay leaves. Cook according to package directions. I make mine in a rice cooker.
Once the rice is cooked, fluff it with a fork and add the vegetable oil, lime juice, cilantro, and salt. Stir to combine. Taste and add more salt if necessary.
