Cilantro Lime Rice

This Cilantro Lime Rice tastes just like the rice you get at Chipotle.

Ingredients

  • 2 ¼ cups basmati rice
  • 3 cups water
  • 2 bay leaves
  • 1 tbs vegetable oil
  • juice of 2 limes
  • ½ cup fresh cilantro chopped
  • kosher salt to taste

Instructions

  • Combine the rice, water, and bay leaves. Cook according to package directions. I make mine in a rice cooker.
  • Once the rice is cooked, fluff it with a fork and add the vegetable oil, lime juice, cilantro, and salt. Stir to combine. Taste and add more salt if necessary.
