P.F. Chang's Chicken Lettuce Wraps

- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 onion diced
- 1 lb ground chicken see notes
- ¼ cup hoisin sauce
- 2 tablespoon soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon freshly grated ginger
- 8 oz. water chestnuts minced
- 2 green onions thinly sliced
- ½ cup shredded carrots
- ⅓ cup roasted peanuts or cashews roughly chopped
- kosher salt and black pepper to taste
- 1 head butter lettuce or bibb lettuce
Heat the olive oil in a heavy bottomed saucepan over medium heat. Add the garlic and onions, cooking until the onions are translucent.
Add the chicken and cook until browned, crumbling as it cooks. Drain excess fat.
Add the hoisin sauce, soy sauce, rice wine vinegar, ginger, water chestnuts, green onions, shredded carrots, and chopped nuts. Cook for approximately 5 minutes.
Taste the filling and season with salt and pepper to taste.
Spoon a bit of the mixture into each leaf of butter lettuce, using the lettuce like you would a soft taco shell.
- Ground turkey or ground pork would be delicious substitutes for ground chicken
