Believe me, I like sugar cookies as much as the next guy.  They’re classic, sweet, and are more often than not topped with some frosting and fun sprinkles.

But making them is so time and labor intensive.  Or maybe this is really just me being lazy… Either way, you gotta make the dough, chill it, roll it out, cut it out, bake it and hope that your cut out cookies retain their shape, frost them, blah blah blah.

You’ll need:

For the bars –

  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract

For the frosting – 

  • 1 stick unsalted butter, room temperature
  • 3-4 cups powdered sugar
  • 3-4 tbs milk
  • 2 tsp vanilla extract
  • food coloring, optional
  • sprinkles, optional (but highly recommended)

Preheat the oven to 375 degrees F.  Line a 9×13-inch pan with parchment paper, leaving some overhang on the sides.  Don’t skip this step, as the parchment paper will serve as a “sling” that will make removing the bars from the pan much easier.

In a medium-sized bowl, whisk together the flour, baking powder, and salt.  Set aside.

In the bowl of a stand mixer, cream the butter and sugar together until light and fluffy.  Ad the egg and vanilla extract, beating until combined.

Little by little, add the dry ingredients, scraping down the sides as necessary.

Press the sugar cookie dough into the bottom of the prepared pan, in an even layer. Bake 18-21 minutes, or until the edges just begin to turn a golden brown color.  Allow the bars to cool completely.

To make the frosting, beat the remaining stick of butter in the bowl of a stand mixer for 2 minutes.  Add 2 cups of powdered sugar, 1-2 tbs of milk, and the vanilla extract.  Beat until combined.  Add as much powdered sugar as needed to reach your desired frosting consistency.  Use the remaining milk to thin things out if needed.  Add the food coloring, if you’re using it.  Beat for 5 minutes, or until the food color is adequately distributed (scrape down the sides if necessary) and the frosting is light and fluffy.

Frost the fully cooled bars and top with sprinkles.  Use the parchment paper to remove the bars from the pan and slice into squares.
