Fiesta Week continues here at A Nerd Cooks. I made these skewers for dinner tonight for Sean, myself, and a couple of friends. They were a hit. I will definitely be making them again… probably as soon as Memorial Day weekend! This recipe came from the blog Little Leopard Book.
- 4 chicken breasts
- 5 limes (4 juiced, 1 reserved)
- 1/2 tbs kosher salt
- 1/2 tbs cumin
- 1 tbs ground chipotle pepper
- 1/4 cup cilantro, chopped
- 1 garlic clove, minced
- 2 red bell peppers
- 2 green bell peppers
Combine the lime juice, salt, cumin, chipotle pepper, cilantro, and garlic in a mixing bowl.
Chop the chicken breasts into cubes. Put them in a plastic container or plastic bag. Pour marinade over. Close and shake until all of the chicken is covered. Place it in the fridge for 30 minutes.
While the chicken marinates, chop the peppers into 1-2 inch squares/rectangles.
After marinating, skewer the chicken and bell peppers. Grill for 5-7 minutes. Flip over and grill for 5-7 additional minutes.
When the chicken is done, remove from the grill and squeeze the last lime over it. Now eat! I’d recommend having a margarita on hand, as the chicken is a bit spicy. 😉
