Fiesta Week continues! First Margarita Cupcakes, now Margarita Chicken. Are we noticing a pattern here? This recipe (Yes, more grilled chicken. Are you sick of it yet?) comes from The Slow Roasted Italian.
- zest of 1 lime
- juice of 3 limes
- juice of 1 orange
- 1 jalapeño pepper, minced (ribs and seeds removed)
- 5 cloves garlic, minced
- 2 tsp ground cumin
- 1 tsp kosher salt
- 1/2 tsp black pepper
- handful fresh cilantro, roughly chopped
- 2 oz. tequila
- 1/4 cup extra virgin olive oil
- 4 boneless, skinless chicken breasts (~2 lbs, or more if you are feeding more people)
Put the chicken breasts in a zip top bag. Set aside.
Combine all ingredients (minus the chicken) in a small bowl. Whisk to combine and pour into the bag, over the chicken. Slosh everything around, and set aside in the fridge. Allow the chicken to marinate for 2-3 hours, sloshing the contents around occasionally.
Grill until done through. Enjoy!
