Grilled Chicken with Herbed Balsamic Marinade

Owing to our ballin’ new grill, you can expect to see a lot of recipes for the grill this spring/summer.  Here’s an easy one that I made up as I went.  Let it marinate as long as possible (for up to 24 hours)!  It only gets better the longer it sits.

You’ll need:

  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 tbs honey
  • 2 cloves garlic, minced
  • 1/4 tsp chili powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • fresh herbs of choice, minced (I used basil, parsley, and rosemary)
  • 2-4 chicken breasts

Combine all ingredients (except for chicken) in a bowl and whisk together.  Put the chicken in a zip top bag and pour the marinade over.  Slosh everything around a bit.  Let the bag sit in the fridge 1-24 hours.  Grill and enjoy!
