White Trash Tagalong Cookies

So this isn’t really so much a recipe post, as it is a “hey, here’s a neat idea” kind of thing.  My brother-in-law, Joe, made these when we visited for Easter.  They taste very similar to the Girl Scout cookie, Tagalongs.  The best part is, you can enjoy them year round!

You’ll need:

  • Ritz crackers
  • Peanut butter
  • Semi-sweet chocolate chips or baking chips, melted

Spread peanut butter on one cracker and top with another, making a little sandwich.

Dip sandwiches in melted chocolate until coated.  Set them on a wax paper-lined cookie sheet and allow the chocolate to harden.  Eat ’em!
