This is adapted from the recipe on Natasha’s Kitchen. Have it as a side dish, or as lunch. I opted to have it for lunch.
- 1 lb green beans (fresh or frozen)
- 1 tbs olive oil
- 3 garlic cloves, minced
- 8 oz. cremini mushrooms, sliced
- 1 tbs soy sauce
- 1 tsp sesame oil
- salt and pepper, to taste
- toasted sesame seeds, optional
Bring a pot of water to a boil. Add the green beans and cook for about 5 minutes. Drain into a colander and rinse with cold water to stop the cooking process.
While the green beans are cooking, add the olive oil and minced garlic to a large pan. Add the mushrooms and saute until they are tender.
Add the green beans to the large pan. Add the soy sauce, sesame oil, salt and pepper, and toss everything around to combine. Garnish with sesame seeds if you’d like.
