As I’m sure you’re aware, Valentine’s Day is coming up this week. While Sean and I don’t make a big deal about the day, it’s still nice to have a special and delicious meal to eat. This pasta sauce is not only delicious, but incredibly simple to make. The recipe comes from Everyday Italian by Giada De Laurentiis.
- 1 lb penne pasta
- 1 quart marinara sauce (homemade or store-bought*)
- 1 cup vodka
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
Cook pasta according to directions on the package. Drain and set aside.
While the pasta cooks, simmer the tomato sauce and vodka in a large skillet over low heat until the sauce reduces by 1/4, stirring often (about 20 minutes). Stir the cream into the sauce. Simmer until heated through. Stir in the cheese and heat until melted.
Add the cooked pasta to the sauce, toss to combine. Enjoy!
*Giada recommends that if it’s store bought, and is chunky, you should run it through a blender and blend until smooth. It’s totally fine if you don’t. You’ll just end up with chunky sauce.
